I am always scoping out low carb meals that will make easy weeknight dinners for my family.
I seriously do not have the time right now for serious cooking. Like ever.
With two tiny people demanding my attention at all hours I need easy recipes that I can throw together in a couple of minutes.
I can’t take the time to prep and chop anything fancy. But we have to eat. We like things that taste good too.
Oh, and I like to be intentional about having leftovers because that means less time cooking each week. #winning
Don’t get me wrong. I actually love to cook. However, I don’t love to cook while my children cry. Ha.
Yes, I do get them to help sometimes. Of course I do. But I’m terribly squeamish about having my 1 year old around raw chicken. She will try to eat anything, y’all.
There will be plenty of time for fancier fare when these girls are a bit bigger, but for now this mama needs recipes that don’t add stress to her life. Or (as a PCOS sufferer) her waistline.
I’m far from a perfect mom, but recognizing my human limits sure helps me be a calmer and saner one.
I am under no illusion that I’m Supermom. Don’t worry.
Ladies who have clean houses and cook magazine-worthy dinners every night and keep themselves looking lovely and have happy kiddos and stay sane. Well, to be perfectly honest with you, I’m flummoxed and would love to take some lessons from you!
